Each crop is harvested and hand processed using traditional methods with no fuel-powered machinery. For example, chilies are sun-dried and pounded into chili flakes or powder using a mortar and pestle for superior taste, flavor, and texture. Local farmer societies have now come together to create the Mahayaya Ecological Farmers Association (MEFA).
